Herb's Pit Bar-B-Que
As North Carolina's westernmost barbecue restaurant, Herb's carefully walks the lines of demarcation in the barbecue world. “In Georgia, people like a ‘tomatoey,’ sweet sauce,” says Vaughn Gibson, Herb's son. “Here in North Carolina, the preference is vinegary and a little sweet. Our sauce is sweet and sour.” This restaurant is on The North Carolina Barbecue Society Historic Trail.
